Ingredients
  

Dressing
  • 1/4 cup extra virgin olive oil
  • 4 tbsp red wine vinegar
  • 1 garlic clove minced
  • 1 tsp dried oregano
  • 1/4 tbsp sea salt
  • 1/4 tsp ground peper
Salad
  • 2 cups halved cherry tomatos
  • 1 cucumber seeded and sliced, 1/4 inch
  • 6 oz feta cheese
  • 1/4 cup thinly sliced red onion
  • 1/3 cup chopped green pepper

Instructions
 

  • In a small bowl, whisk together the olive oil, red wine vinegar, garlic, oregano, salt + pepper.
  • On a large platter, arrange the green pepper, cherry tomatoes, feta cheese, and red onions.
  • Drizzle with the dressing and toss gently.
  • Season to taste and serve.
